    Let's get healthy with My Blue Tea's brand ambassador @vanessa__genevieve Who doesn't love a smoothie? It's like having an ice-cream but with less calories and guilt! Rich, creamy and oh so yummy! Smoothies have become an increasingly popular wellness trend and are frequently marketed as a health food. We actually wanted to share this blog right after the Christmas feasting, thinking it would make for a good New Year's Resolution. But then we realised...wait a second. There was Australia Day coming up on 26th January, and then the Chinese Lunar New Year was on 1st February ... it was non-stop celebrations one after another! Besides, we were also excited to share all the delicious recipes and new products we were bringing in for the Lunar New Year. So that's why we decided to let this Smoothie blog take a queue number. After all, good things come to those who wait. And at My Blue Tea we always have something that's healthy, fun and yummy to share! All in good time! We are excited to share some beautiful smoothies for you by our good friend and our Brand Ambassador, Vanessa Genevieve! Vanessa is a scientist (yes, you read that right! Vanessa's Uber Pink Protein Oat bowl can brighten up the day and hopefully put a smile on your faces! INGREDIENTS - 40g @flipsmuesli 5 grain porridge - 1 scoop of protein powder (I use @optimumnutrition Gold Standard in Vanilla Ice Cream). I buy all my fitness supplements from @elitesuppsaustralia - 1 cup unsweetened almond milk - (Optional) About 1/4 cup water if you like to cook it down more like me! - 100g fresh strawberries - 15g @byronbaypeanutbutter smooth peanut butter - 1 tsp @my.blue.tea Pink Dragonfruit powder - Pinch of salt Extra health information: 441 calories P 31g - C 40g - F 17g How often should you drink smoothies? Smoothies may form part of a balanced diet, but be sure to focus on fruits with a lower sugar content, and choose natural fresh or frozen produce whenever possible. Include one or more sources of protein like yogurt, kefir or milk, as well as healthy fats from nuts, seeds or avocado. Both adults and children should consume smoothies no more than one portion per day (even though it is tempting to have a second!) However, remember that a smoothie is not a substitute for water, so you would still need that 8 glasses of water a day even with the smoothie. Stay hydrated and healthy with My Blue Tea´s range of teas. You can even create a rainbow of colours - add anything acidic, and the tea will change to pink and purple. It´s really rather magical to watch, even though we say so ourselves! It´s to give it a light fragrance and keep the interior smelling nice in a gentle way. The smell of pandan is as humble as the plant - elegantly subtle and not overpowering. We´re still waiting for someone in the perfume industry to create a new line of Pandan l´eau de toilette sprays! To complement the tarts, you can make a deliciously refreshing pandan drink with My Blue Tea's Pandan Powder, or another to-die-for treat - kaya (pandan coconut jam). So here we go, the recipe for Pandan Ondeh Ondeh Tarts! RECIPE - Pandan Ondeh Ondeh Tarts Ingredients (makes around 40 round tarts) For Tarts 175g of unsalted butter, softened at room temperature 250g of all purpose/plain flour 1 egg yolk 50g of condensed milk 1/4 tsp salt 1 tsp of @my.blue.tea Natural Pandan extract For Fillings 200g of Gula Melaka (also known as coconut sugar or palm sugar) 100ml water 100g of desiccated coconut 2 tablespoons of @my.blue.tea Coconut Milk powder diluted in water ( optional) For Egg wash & decoration 2-3 egg yolks and a small amount of milk Small amount of desiccated coconut & shredded coconut Method To make the filling: Chop the Gula Melaka into small pieces and heat up in a pan with water until it fully dissolves. Add coconut milk and mix. Then, add in the desiccated coconut and stir until it soaks up the Gula Melaka. Stir the mixture until it looks dry and forms small clumps. Leave for half an hour to cool down. It is ready to roll when you lift up the filling and it doesn’t stick to your fingers. Roll into 10-13g of balls (or cylinder shape for variety). Tip: If it still doesn’t shape easily, just place in the fridge for a while. To make the pastry: Cream softened butter and add the condensed milk. Then beat at high speed for about 2 mins until it is light and fluffy. Then add the egg yolk ( if you double the recipe add the egg one at a time). Then add My Blue Tea Pandan extract, or more to your desire (but try to resist the temptation to add too much!) Beat until it is all combined and add the flour slowly at low speed. When is all combined, test it doesn’t stick to your finger. Next, take approx 12-15g of pandan pastry to your desired amount of filling (this may take some experimenting) and roll into balls. Place fillings and roll them into balls ( or cylinder shape). Put on baking paper on tray. Do the egg wash and sprinkle a small amount of desiccated coconut and shedded coconut on top. Baked in a preheated oven at 180c for 15-20 min until it browns on top. It will take longer/shorter depending on quantity used.   • Celebrate Australia Day with Lamb Shank ala Palembang

    26th January is the official National Day of Australia - do we hear a big "Aussie! Aussie! Aussie! Oi! Oi! Oi!"? Straight to Lamb Shank Recipe Straight to Lamb Satay Recipe What better way to celebrate Australia Day than with a big cook-up? Lamb is a popular meat to eat and be it rib, rump or roast, you'd want to have some lamb recipes handy for the big celebration! Get out your barbecues, grills and skewers and get ready to roast! Our team at My Blue Tea love a good solid lamb satay made with our Satay Marinade Powders, and perhaps a few lamb shanks to go with that would be nice too! With all the Satay Marinade Powders that have left My Blue Tea's spice pantry, we gather >40,000 sticks satays have been happily served around the world! Here are two recipes for lamb shank and lamb satay, so you're all ready and set for Australia Day! LAMB SHANK RECIPE Ingredients (A): * 1 packet @my.blue.tea Rendang Base (50g) * 300ml water * 70ml cooking oil * 150g chili boh * 1kg lamb shank (pre-prepared - cooked until soft) Ingredients (B): * 200ml water * 2g lemongrass* * 2g galangal* * 2g ginger* * 100g onion* Note : *Blended * 5g cumin** * 5g fennel** * 5g coriander** * 235ml sweet soy sauce * 100g roasted desiccated coconut (kerisik) * 10g sugar Note : **Fry without oil and crushed Ingredients (C): * 50g @my.blue.tea Santan DCM Coconut Powder (Shake and mix well water) * 200ml of water METHOD 1. Mix Ingredients (A) well and cook until water evaporates and oil rises to the top. 2. Add Ingredients (B) and lamb shank, cook until the gravy is rich and thick. 3. Lastly, add in Ingredients (C) and bring to boil until oil rises to the top. 4. Ready to serve. LAMB SATAY RECIPE Lamb satays are great for Australia Day! They are so easy to prepare, especially with My Blue Tea's Satay Powder, and they are a really convenient food to peck at, always a hit with adults and children! METHOD * Open 1 pack of @my.blue.tea Satay Marinade Powder and spread onto 1kg of lamb for > 3 hours. * Remember to add some sugar so it will caramelise when you BBQ them. * Skewer or pan fry. We suggest skewer for a bit of fun! * Baste with pandan oil - 1 tspn pandan oil - and pour hot oil on it. * Use lemongrass to baste when BBQ-ueing.   • Crispy Juicy Spice Fried Chicken is the new homemade KFC

    My Blue Tea has an exciting new powder to make you want to lick your fingers - Ayam Goreng Berempah (Spice Fried Chicken) Powder Ayam Goreng Berempah may be quite a mouthful to say, but in Malay it simply means ‘spice fried chicken’. You may well think, can't you just get that at KFC then? As food lovers, nothing beats the magic of homemade food! Ayam Goreng Berempah is a gorgeous dish infused with a tantalising mix of herbs and spices giving it a truly robust flavour. Its texture is one that makes you reach out for another piece, and another, and another. It's crunchy, juicy and you won't be able to resist the crispy crumbs either! You'd be spooning them up and eating the heaps of crumbs like cornflakes! This Malaysian-style fried chicken is highly explosive in taste and is different from the typical Southern versions. It is marinated overnight so the herbs and spices can really soak deep into the meat, giving it a deeper punch. When it is ready to go in the pan, you will be blown away by the fragrance once the meat is sizzling away! Your kitchen and house are guaranteed to smell absolutely divine! Crispy and tender are two amazing textures to find in a chicken dish. What makes this Malay-style fried chicken dish so special is also its generous serving of crunchy crumbs. It totally brings out the kid in us. Don't be shy to scoop more crumbs on your plate - trust us, these humble crumbs taste heavenly with steamed white rice. The reason why these crumbs are so delicious is because they are actually the marinade which is a mix of beautiful spices such as turmeric, lemon grass, cumin etc. A neat little tip is the addition of curry leaves when frying the chicken meat. Handy Tips for Cooking SFC 1) You can use chicken breast but the meat on this part of the chicken tends to dry very easily if it's overcooked. The dish is more likely to turn out well if you go for thighs, drumsticks and even the wings. This is because the fats on these parts help to cushion the meat and add flavour during the frying process. It keeps the meat juicy and tender. 2) If you can, leave the chicken to marinate overnight. This allows the herbs and spices ample time to really seep into the meat. If not, marinating for 30 minutes is also sufficient to create a tasty dish. No Preservatives and No Artificial Colours. 3) There is a technique called the double-frying technique (see example in the Inchi Kabin or Nyonya fried chicken recipe) which you can use. It is actually sufficient with only one cycle of frying. One thing to note before frying is to remove any marinade that may be stuck to the chicken pieces to prevent them from burning. Cast iron pots retain heat and do a good job during the frying process. You can fry the chicken pieces at low to medium heat with the lid on. This allows the heat to cook the chicken thoroughly. When you remove the lid, slightly increase the heat to brown the chicken skin. This makes it nice and crispy. 4) If time is an issue, it is possible to freeze marinated chicken. You can then keep it for later use to speed up the cooking process. Thaw the frozen chicken pieces in the refrigerator for at least 6 hours before frying. Another method of thawing is to put the frozen chicken pieces in a plastic bag or container and soak it in room temperature water. Remember, it's best to use frozen marinated chicken within 6 months, otherwise the flavours are lost. Other Ways of Cooking Ayam Goreng Berempah SFC a) If frying is not your favourite style, there are other ways to enjoy Ayam Goreng Berempah. You can bake the chicken pieces in a preheated oven at 200ºC for 50 minutes. This is a healthier version, and you can still enjoy the crispiness and juiciness of the chicken this way. Spread the marinade on a tray and bake it along with the chicken. It takes about 20 minutes for the crumbs to become crispy. You can remove the crumbs once they are ready, but remember to allow the chicken to continue baking until they are fully cooked. b) If you have an air fryer, that is another option for you to make Ayam Goreng Berempah. Preheat the air fryer at 180ºC and then cook the chicken for 20 minutes. During the last 5-10 minutes, you can increase the heat to 200ºC.     Lucky Foods to eat this Lunar New Year with @my.blue.tea Time has a strange way of creeping up on you and before you know it, 2022 has pounced on us! The Year of the Tiger is fast approaching! And 1 month into our New Year Resolution here we go again, another round of feasting! And that means we are gearing up for the Chinese New Year celebrations! Hear My Blue Tea Roar The beauty of living in a multi-cultural environment, for those of you who enjoy that privilege, is you get to celebrate all the major festivals of different cultures...which in My Blue Tea's language, means getting to enjoy and share lots of amazing dishes! Ushering in Chinese New Year Chinese New Year, also known as Lunar New Year or Spring Festival, is China's most important festival and is celebrated by Chinese all over the world. The first day of the Chinese New Year marks the start of a new year and it is a time that heralds good luck and fortune according to a myriad of Chinese beliefs and superstitions. Most importantly, it is a time for families to be together and, depending on the country, you may even get a week of official public holiday. For many, this is the time when many return to their hometowns or countries to celebrate and be with family. Chinese New Year 2022 will fall on Tuesday, February 1st, 2022, beginning a year of the Tiger. It is a joyous time of feasting and celebrating and there is a palpable buzz in the air as everyone prepares their homes and stock up their kitchens with ingredients to cook up a storm. A Sweet Delight During Chinese New Year, one must have pineapple. Not so much because it's delicious or healthy. It's because in the Hokkien dialect, it is pronounced as "Ong Lai" which sounds like 'ushering in prosperity'. It may not be so romantic to just chomp on a piece of pineapple, so a beautiful delicate rich pastry called pineapple tarts were created. These pretty little things are crumbly, buttery and the crust is slightly salted which gives it a fun zing to the tongue when you bite into one and it melts in your mouth. The generous dollop of sweet pineapple jam in the middle is one you want to literally sink your teeth into. Pineapple tarts somehow have a whiff of nostalgia about them, and every family remembers stories of either baking the tarts, sharing the tarts, eating them or gifting them. Here are the years of those who were born in the Year of the Tiger: 2022, 2010, 1998, 1986, 1974, 1962, 1950, 1938.…. 2022 is a year of the Tiger, starting from February 1st, 2022, and ending on January 21st, 2023. It is a Water Tiger year. The Tiger is known as the King of all Beasts in China. Yes, I´m afraid The Lion King has to momentarily take a back seat here. The zodiac sign of the Tiger is a symbol of strength, of the power to exorcise evils, and bravery. It is not uncommon to find images of tigers on children's hats or shoes in China. The Tiger is the third in line on the Chinese zodiac. The 12 zodiac animals are, in order: Rat, Ox, Tiger, Rabbit, Dragon, Snake, Horse, Goat, Monkey, Rooster, Dog, and Pig. Each year is ruled by an animal sign and follows a 12-year-cycle. Lucky Dishes to Eat Whether you are superstitious or not, it's no harm trying out a delicious lucky dish here and there! There are several ´lucky´ dishes you can sink your teeth into in this Year of the Tiger. Every dish or food that is set on the table for Lunar New Year has a symbolic meaning. (2) WEALTH (Ingots) - Chicken Curry Jiaozi / Dumplings The humble Chinese dumpling (饺子 Jiǎozi /jyaoww-dzrr/) actually has a history of more than 1,800 years. It is a classic auspicious food for Chinese New Year, and is traditionally eaten on Chinese New Year's Eve. It is especially popular in North China, though this custom can be seen all over the world. Considering what a lovely delicious morsel each ingot is, one would be happy to eat it any time of the year! Chinese dumplings are made to look like Chinese silver ingots. Silver ingots are boat-shaped, oval and turned up at both ends. If you believe in the superstition, it is said that the more dumplings you eat during the New Year celebrations, the more money you will make in the new year! So what's inside these delightful little pouches? The fillings are typically minced meat and finely-chopped vegetables. This savoury mix is then wrapped in a thin and elastic dough skin. Other popular fillings are minced pork, diced shrimp, fish, ground chicken, beef, and vegetables. The dumplings can be cooked by boiling, steaming, frying or baking. They are cylindrical-shaped rolls filled with vegetables, meat, or even something sweet. The fillings are wrapped in thin dough wrappers. These are then fried, which gives the spring rolls their gorgeous saliva-inducing golden-yellow colour. They make for highly popular finger foods at parties. Spring rolls are a great hit with kids. In Chinese, the name of the glutinous rice cake sounds like "getting higher year by year". Typically, a promotion or a higher position is associated with better pay and better quality of life, so the higher you ascend, the more prosperous your business will be! The main ingredients of niangao are sticky rice, sugar, chestnuts, Chinese dates, and lotus leaves. 年年高 (niánnián gāo /nyen-nyen gaoww/) is a lucky saying to invite positive connotations e.g. children's height increasing as they grow big and strong, a rise in business success, better grades in one´s studies, promotions at work, etc. A Toast, Anyone?   • The Ultimate Pandan Cendol Cake Recipe

    Jump straight to recipe When you marry Pandan with Cendol, you get the most delicious and delicately fragrant labour of love cake ever! Today, in light of the upcoming Christmas season, we are delighted to share with you a recipe for Pandan Cendol Cake. A word of caution though, you'll need a lot of patience and dedication to create this one. But it's totally worth it. So, without further ado, let's jingle all the way through the story behind this delectable dessert! Cendol (/ˈtʃɛndɒl/) is an iced sweet dessert commonly found in Southeast Asia. It is highly popular in Indonesia, Malaysia, Brunei, Cambodia, East Timor, Laos, Vietnam, Thailand, Singapore, and Myanmar. The mere mention of Cendol is enough to make people feel faint with delight as its taste practically transports you to paradise. It is the one dessert that has everyone hunting for the best cendols all over with the best ones to be found in a little stall by the roadside. The Cendol dessert is generally made up of bits of green rice flour jelly, coconut milk and palm sugar syrup. Every chef has their own unique way of dressing up their cendol. Some add diced jackfruit, sweetened red azuki beans, or even durian (those who do not mind its particular "aroma"!) Here's the Pandan Cendol Cake recipe Group A: Pan size (Pandan Chiffon) 7” round pan (with removable bottom cake pan), height is 3” 4 egg yolks (large or A size) 20g castor sugar 50g corn oil 70g Pandan Milk ( Mix 10g or more Pandan powder with 70g milk or coconut milk) 1 tbsp Pandan leaf extract for green food colouring (more for a deeper green colour) 100g cake flour 4 egg whites (large or A size) 1tsp lemon juice or 1/4tsp cream of tartar 60g castor sugar Method Lightly whisk egg yolk with sugar. Add corn oil. Stir to combine. Then add Pandan milk. Stir and combine well. Add cake flour. Stir to mix well. Set aside. Add lemon juice into the egg white and beat until foamy. Gradually add sugar and beat until almost stiff or firm peaks form (hand mixer at speed 2 takes about 4 mins). Take 1/3 portion of meringue and use a hand balloon whisk to mix with the egg yolk mixture until light. Fold 1/3 of the meringue into the egg yolk mixture using a silicone spatula. Fold well. Then fold in the remaining meringue and then fold to combine. Pour batter into the pan. (Note: It is not necessary to line the pan with paper. If you have a normal cake pan, just line the side and bottom with baking paper then remove cake from cake pan as soon as you take it out of the oven) Bake in a pre-heated oven at 140C for 25 mins. If you use the lower rack, place it on the second rack from the bottom. Then, increase to 170C and continue to bake for 30 mins. Immediately invert the cake pan onto a wire rack. Let it cool for about 10-15 mins. Remove cake from the cake pan and continue to cool on wire rack. If you want to maintain a nice dome shape, then you will have to remove the cake from the cake pan as soon as it is taken out of the oven. Then, leave it to cool on a wire rack. Cut away the dome on the top, then cut it into 3 pieces. All these beautiful desserts are made with @my.blue.tea Superfood Super Powder. From top left - (1) Pandan, Pitaya & Durian Madeleines, (2) Chilli Cake (3) Pandan Ondeh Ondeh Swissroll (4) Dragon Fruit Cloud Cake (5) Purple Sweet Potato Angku and (6) the classic Pulut Tai Tai Group B: Cendol Jellies 1tbsp Pandan leaf extract (you can add more to get your desired colour) 200ml water 25g cornstarch 5g mung bean starch (You can substitute this with rice starch.) 5g wheat starch (Not compulsory. You can omit this if you can't find it.) 15g granulated cane sugar ¼ tsp lye water (optional) Method Prepare an ice bath by placing ice in a large bowl filled with water. Add 200 ml water, cornstarch, mung bean starch, wheat starch, sugar, pandan extract and lye water (if you have it). Turn on the heat to high, then stir the mixture with a spatula. Once the mixture starts to thicken, reduce the heat to low and continue to cook until it becomes a translucent paste. Cook for another 2 minutes. Remove from heat and carefully transfer the paste to a potato ricer -- working in batches, squeeze the paste through the ricer over the top of the ice bath, ensuring the "cendol noodles" are submerged in the ice water. Leave the cendol in the ice water for 15 minutes. Drain the cendol and set aside in the refrigerator until ready to use. Group C: Sago Layer 120g pearl sago 70g castor sugar 100g pandan milk water ( I use the balance pandan milk from making the sponge cake, about 13g, then I add 87g water.) Method Wash the pearl sago then soak in clean water. Keep adding more water as the sago will begin to expand once it is soaked. Do this for 45 mins. Mix soaked sago, sugar and pandan milk water in a mixing bowl. Stir to mix well. Pour into a 7” steaming tray and steam over medium heat for 30 mins. Set aside to cool. Now we can start assembling our two pandan sponge cakes (Group A) and sago layer (Group C) before making the coconut mousse layer. I used the same 7" removable bottom cake to assemble. Cendol The ingredients of cendol rely heavily on aren (sugar palm) and coconut. The original or basic ingredients are coconut milk, jelly noodles made from rice flour with green food colouring (usually derived from the pandan leaf), shaved ice, and palm sugar. Cendol is known as Lot Chong in Thai, chè ba màu with beans in Vietnamese and in Myanmar, mont let saung. They all have something in common - shaved ice, pandan and coconut milk. It completely sold out at the Malaysian Festival 2018 with our Cendol with Durian Powder. Group D: Coconut Mousse Layer (Prepare this after placing the chiffon cake and sago layer into the cake pan) 20g gelatine powder 50g hot water 250g thickened cream 50g castor sugar 175g coconut cream Method Mix the gelatine powder and hot water. Stir it while the gelatine is melting in the hot water. Mix well. Mix sugar and coconut cream in a saucepan, bring to boil. As soon as you see it boiling, pour in the gelatine powder and stir to mix well. Remove from heat and set aside. Beat the thickened whipped cream over another big bowl that is filled with ice and water. Beat over high speed until stiff and firm. If the gelatine mixture still feels hot, place the saucepan over the big bowl with iced water to bring the mixture to room temperature. Then mix it well with whipped cream. Group E: Gula Melaka Agar-agar (Prepare this after the coconut mousse has set) 1/2tsp Agar-agar powder 10g coconut milk 40g Gula Melaka or palm sugar, chopped 1tbsp castor sugar 180g water Looking to have a Pandan-style Christmas this season? Place the saucepan over a bowl of tap water to bring down to room temperature before pouring on the cake. To Assemble the Cendol Cake Slice the pandan sponge cake into 3-4 pieces (4 pieces to get a thinner cake layer). Remove the sago layer from the steaming tray (you can place a piece of cling film on it). Place the first piece of pandan cake on the sago layer. Trim the sago layer to the same size as the pandan cake. Place the removable bottom disc from the cake pan on to the first pandan sponge cake and place them in the cake pan. You should be able to see a small gap along the sides of the pan - this gap is to to be filled in with coconut mousse later. Place the second piece of pandan sponge cake on top of the sago layer. Pour 300g of coconut mousse on top. Scatter in the cendol jellies and fill the gap along the sides. You may also put in a few cooked red beans. Then shake the pan to let the coconut mousse flow and fill the gap. Place the cake tin into the freezer for up to 5 mins to set. Remove the cake pan from the freezer. Touch the coconut mousse to see if has set, then place the third piece of pandan sponge cake on top. Pour the remaining coconut mousse on the sponge cake and level it. Store in the refrigerator for 1-2 hours to let it set (you may place it in the freezer to speed up the process). Lastly, pour in Gula Melaka agar-agar on the coconut mousse. Store in the refrigerator for several hours or overnight. Since then, Zaleha has gained tremendous support from foodies all over the world. And have gone on to publish her cookbook and various sauces that are always sold out. So we are over moon that we are so lucky to have Zaleha who wants to have fun with Jackfruit Latte Powder not to mention craving for some Cempedak - to create something sensational. Besides making a delicious creamy fragrant latte, this Jackfruit powder has proven to be versatile and today my girls and I made a delicious layer cake. Originally a sour plum cake recipe, I try to infuse the Jack Fruit flavour in the yellow batter and took out the pandan flavour from the green batter mix so there will not be too many mixed up flavour. I must say the subtleness of the jack fruit works well with the tangy sour plum pieces and to get a double thumbs up from Mr Olpin and girls, I thought I must share this with Alexx. Here you go Alexx, your jackfruit latte is a favourite in this household be it a latte or in a cake. Kek Lapis Asam Haw Flakes dengan Cempedak. Memula nak try resipi ni rasa macam tak kena je cempedak dengan asam haw flakes tapi di sebabkan malas nak buat dua biji kek kita cuba je la. Memang sedap sangat. Kita pakai serbuk latte Cempedak dari @my.blue.tea dan rasa latte macam original cempedak. Sedap sangat!" INGREDIENTS : * 7 large eggs * 250 grams butter, softened * Half cup of sugar * I whole can of condensed milk (397 grams) * 200 grams Marie biscuit or in the UK we call it Rich Tea biscuits * 200 grams of Jacobs Cream Crackers * 3 tbsp of @my.blue.tea jackfruit latte powder * ½ tsp baking soda * Pinch of salt * Sour plum pieces (haw flakes) * Yellow and green food colouring (optional) * Melted butter to brush on the cake layers BUY NOW - BLUE BUTTERFLY PEA POWDER Some other bakes by Zaleha with @my.blue.tea Butterfly Pea Powder. METHOD : (1) Place both the biscuits in a food processor and blend into a fine powder (2) Beat eggs till light. (3) In another bowl beat butter and sugar till pale. (4) Mix in the beaten eggs and gently beat to mix. (5) Add in the condensed milk and baking soda and beat again till everything is incorporated. (6) Sift the biscuit powder. Gently fold them into the mixture. (7) Divide the mixture equally into two bowls. (8) Add in the Jackfruit Latte Powder into one of the bowls and stir to mix. Put a little bit of yellow colouring if you prefer. (optional) (9) Add in a drop of the green colouring (optional) into the other mixture and gently fold to mix. (10) Boil enough water in a steamer. I used a 9-inch round tin that fits into my steamer. If you have a smaller steamer you might want to steam the cake in two batches. (11) Grease your baking tin and line it with baking paper. Spoon in few tbsp of the green batter into your baking tin, spread them evenly into a thin layer, arrange the sour plums pieces and steam it for 4 minutes. (12) Transfer onto wire rack and let cool for 10 minutes before inverting them on the rack. (13) Remove the baking paper and let cool before cutting them. Enjoy. Who is That Rendang Lady? See recipe here: Pulut Tai-Tai COCONUT RICE : • 3 cups jasmine rice • ½ tablespoon salt • 1 1-inch piece fresh ginger, peeled and sliced • 2 pandan leaves, tied into a knot • 3 cups coconut milk • 1/2 cups water • 1 tsp spoon MY BLUE TEA – Blue Butterfly Pea Flower Powder Easy way to do coconut rice is to buy My Blue Tea Nasi Lemak Premix Powder ANCHOVY SAMBAL : • 6 tablespoons dried chilli paste • 4 cloves garlic, peeled and left whole • 1 1-inch piece fresh ginger, peeled and sliced • 4 shallots, peeled and cut in half • 3/4 cup water • 6 tablespoons peanut oil • 1 teaspoon salt, or to taste • 1 tablespoon sugar, or to taste • 1/2 medium onion, thinly sliced • 3 tablespoons tamarind water, or 2 tablespoons tamarind liquid concentrate ACCOMPANIMENTS : • 6 banana leaves (12 by 9 inches each), cleaned • 1/2 small cucumber, sliced • 3 hard-boiled eggs, cut in half • Fried Peanuts and Anchovies (or white baits) FOR NASI LEMAK : 1. Prepare the coconut rice: Wash the rice by gently rubbing it with your fingers in a bowl filled with water. When the water becomes cloudy, drain the water and repeat the process until the water is clear. Place the rice in a large saucepan and add the salt, ginger, pandan leaves, coconut milk, and water and cook a few minutes more. Cook all the ingredients in a rice cooker. When the rice is done, remove the garlic, ginger and pandan leaves and stir the rice. Divide into 2 portions. One portion white and one portion mixed with MY BLUE TEA - Blue Butterfly Pea Flower Powder. Then mix both rice types together. Or simply buy My Blue Tea Nasi Lemak Premix Powder - so easy! 2. Prepare the anchovy sambal - Blend the dried chilli, garlic, ginger, shallots, and ¼ cup of water in a blender to a smooth paste with the consistency of applesauce. Heat oil in a wok or skillet over medium heat. When the oil is hot, add the sambal paste, salt, and sugar and stir-fry until fragrant and until the oils separate onto the surface. This takes about 10 minutes. Add the onion and cook until the onion is soft for another 5 minutes. Add tamarind water and the remaining ½ cup water and mix well to combine with the paste. Now add half the crispy anchovies and allow to cook for 5 minutes. Taste the sambal and add more sugar or salt if needed; you want a balanced sweet-salty taste. Turn off the heat. 3. To serve, line each plate with a banana leaf. Place about 1 cup of the cooked coconut rice in the middle of the leaf. (If you like, press the rice into a bowl first and then invert it onto the plate for a neat domed shape.) * Put about 3 tablespoons of the anchovy sambal on top of the rice. * Place a few slices of cucumbers, half of a hard-boiled egg, and * Finally 1 tablespoon each of the peanuts and fried anchovies around the rice. * Serve warm. Or you can mix some Blue Butterfly Pea Powder in your rice cooker when the rice is 90% cooked - sprinkle in some Blue Butterfly Pea Powder in half of the rice and mix and then let the rice cook for a marbled effect. Note - you may substitute lemon with grapefruit or lime. They're just as delicious and refreshing.
