Jump to Pumpkin Shoot Health Benefits Pumpkin Shoot Curry Farsi ko Munta Recipe This is a Nepalese recipe. A Nepali friend who moved here taught and shared with us Pumpkin shoots curry and Momos i.e. Nepalese dumplings in the yummiest spicy tomato sauce. Here we use the tender tips, uppermost shoots, baby leaves, thin parts of the stem, tendrils, etc. to make this delicious vegetable known as Farsi ko Munta. The recipe is basic and rustic, normally a bit of potato is added too as it is yummy. Pumpkin Shoot Curry Recipe Ingredients: *3-4 Cups Chopped Pumpkin Greens *1 Large Potato - Cube or dice *1 Large Tomato - Grate / Chop *1/2 Teaspoon Fenugreek Seeds *1-2 Whole Red Chilies (optional) *1/2 Teaspoon turmeric powder *1-2 Tofu (cut to rectangular shape) *Salt *Coarsely Paste - grind the ingredients below: *10 Cloves Garlic. *1" Ginger. *2-3 tspn @my.blue.tea Spargo Meat Curry base Method: (1) Heat Ghee, add fenugreek seeds and add the Meat Curry base powder, when the Fenugreek seeds changes colour and that it smell fragrant, add potatoes and turmeric powder. A bit of water if required. (2) When potatoes are half done, add the coarsely ground paste and a minute later add all other ingredients , mix well and cook covered till done. (3) You most probably wont need to add water. This comes out super delicious. A delicacy from Nepal on to your table all here in Aussie land perhaps from your garden as pumpkins are easily grown here. Tips: This dry curry method and recipe is also good with the following veggies (1) Bitter Melon curry (2) Chokos (3) Pumpkins but there area a lot more we can explore and to create with our Super spices. Looking at inflation news and current economic challenges, My Blue Tea is stepping in to share tips on how to save costs on food, easy meal recipes along with some gardening tips for plant to plate deli meals. If you have any ideas and tips, do share with us. Food budget tip #1 - Plan your meals With so many recipes on our website, you can plan your meals for the week and cook a bit more to refrigerate them in containers. Bring your own lunch to work. Footballers don't run onto the field without a game plan and when it comes to grocery shopping, the same goes. Planning your meals for the week ahead (or, at the very least, a few days) can pay big dividends. Not only does it allow you to incorporate items you might already have in your fridge/pantry, therefore cutting down on wastage, it also allows you to plan around specific ingredients. For example, if you need a couple of spring onions for fried rice one night, make a chicken and corn soup the following night to use up the leftovers. Remember "failing to plan is planning to fail". Food budget tip #2 - Cook extra It’s cheaper to cook in bulk and use leftovers for lunches, to freeze, or as the base for another meal. Cooking from scratch, and in larger quantities, saves time and money by putting extra meals in the freezer for those hectic days, which means you'll be less likely to resort to takeout when there's nothing left in the fridge. Batch cooking also uses less power so you'll save on energy bills. Food budget tip #3 - Grow some seasonal produce Veggies: You can still plant cabbage, Asian greens like mizuna, mibuna, tatsoi or pak choi, lettuce, rocket, spinach, carrots, celery, cauliflower, spring onions, leek, onions, radish, turnips and swedes. Spread coffee around your lettuce or set up a beer trap to discourage snails and slugs. Other suitable veggies, especially to plant and grow at this time of year in New South Wales, include Mustard Greens, Kale, Cabbage, Cauliflower, Rocket, Peas, Silverbeet, Beets, Potatoes, and Spinach. Give peas a chance this May; they are a top addition to any patch. Food budget tip #4 - Buy in bulk When you're feeding a family, buying enough meat for hungry, growing kids can add up. An easy way to counteract this is to buy in bulk, portion and freeze. If you're buying in bulk or feezing small portions for meal prep, a vacuum sealer might also be a worthwhile investment. As well as helping to keep your frozen food fresh for longer, vacuum sealing will also help to prevent freezer burn, which can affect the taste and texture of your frozen food. Food budget tip #5 - Write a shopping list Once you've planned your meals, write a shopping list. You can even download an app (such as AnyList, Bring and Our Groceries) to help you track and manage your shopping needs, or even apps that allow you to customise meal plans and recipes and then organise the required ingredients into a list for you. Even if you think you can remember what you need, having a list helps keep you on track and can reduce the temptation to go rogue and buy things you won't end up using. It will also save you from having to make a second trip to the supermarket when you realise you've forgotten a key ingredient. Food budget tip #6 - Choose cheaper cuts of meat - with our spices you will be able to make it YUMMY If you're looking for more economical ways of cooking, particularly for larger groups of families, slow cooking is the answer. From chicken curry, beef rendang, lamb shank Palembang style to lamb casserole, slow cooking is the secret to dishing up deliciously effortless dinners. As well as lending themselves to cheaper cuts of meat - such as beef short ribs, lamb shanks and pork shoulder, slow cooking is a set-and-forget meal. Simply prep the night before than put them all in a slow cooker before you leave for work in the morning and you'll come home to dinner already made. These meals also freeze well so make extra and have another dinner up your sleeve. Food budget tip #7 - Use legumes and veggies to bulk out meals Bulking out your meals with lentils, tofu or vegetables is a cost-effective, not to mention delicious and healthy way to stretch your budget a little further. Add grated carrots or zucchini to your beef taco mix, bulk up your chili con carne with red kidney beans or add sweet potatoes or chokos and pumpkins and chickpeas to your lamb stews. Food budget tip #8 - Avoid processed / ready-made foods Save on GST by avoiding ready-made and processed foods. Not only will you be better off financially, but it's also better for your health as you'll be avoiding the added salt, sugar and other preservatives that are hidden in process foods. Three lamb recipes for you to rejoice King Charles III's Coronation & celebrate National Roast Leg of Lamb Day! Three official recipes for King Charles III's Coronation have been revealed — and there's no coronation chicken in sight because it was made for the late Queen so we give you Maharajah Chicken in lieu of the Maharajah i.e. King Charles' godson Maharajah Sawai Padmanabh Singh's (one of India's most eligible bachelors) who may be attending the Coronation come May. As plans for the ceremony on Saturday 6th May 2023 continue to unfold, Buckingham Palace has released the tasty treats for everyone to serve at their street party. The recipes are: Ken Hom's Coronation Roast Rack of Lamb with Asian-style Marinade, Nadiya Hussain's Coronation Aubergine, and Adam Handling's Strawberry and Ginger Trifle. History of National Roast Leg of Lamb Day - 7th May Sheep have been around for a long time. The origin of the domesticated sheep goes as far back as 11,000 BC in Mesopotamia. They are one of the very first animals domesticated by mankind. AT that time, these sheep were known as mouflon, and they didn't look quite like the woolly sheep we know today. Sheep at that time were kept for their meat, milk and even their skin came in handy for parchment and vellum. How to celebrate National Roast Leg of Lamb Day & King Charles III's Coronation A delicious dish of Roast Leg of Lamb makes for a very festive dish any time of the year. If you’ve never made Roast Leg of Lamb, don't get intimidated by how 'big' it sounds. It's actually quite simple. And, doing it My Blue Tea style means your lamb comes out extra special, and your guests will have a very memorable treat! We marinated our Roast Leg of Lamb with yummilicious RENDANG paste! Ah, yes... now you nod sagely as you realise what we are doing. All you need to do is combine 1 packet of @my.blue.tea rendang powder and 270ml of @my.blue.tea Coconut milk powder (by diluting 2 packs coconut powder into 270ml water). Cook it at 160C to an internal temp of 70C for medium. Cover it with aluminium foil (optional), and roast it for one hour at 325F. And there you go. You now have a magnificent Roast Leg of Lamb that smells divine and melts succulently in your mouth. To end with a flourish, serve with fragrant basmati rice spiced with @my.blue.tea kaffir lime powder and tumeric. Rejoice during this Coronation & National Leg of Lamb Day! - Enjoy a Royal Treat at My Blue Tea with a Battenberg Cake Recipe
We made Battenberg Cake with a Purple Sweet Potato twist - what a beauty it turned out to be! Battenberg cake is a light sponge cake. On the outside, it looks like a long, square-faced cake, covered in marzipan. When cut open, you can see four squares alternately coloured pink and yellow. These coloured squares are made by dyeing half of the cake mixture pink, and half yellow. Each sponge is then cut into two long, uniform cuboids, and joined together with apricot jam to form one complete cake. Variations include adding coconut flavouring to the sponge cake and using lemon curd or raspberry jam in place of apricot jam. Ameetha said on Twitter that someone should create something for the King's Coronation. It so happens that not so long ago, Chloe, our good friend in Kuala Lumpur made this particular cake and we thought there was no better time than now to share this historical cake, but as those of you who know us well, we like to add a little My Blue Tea flavour to it, by giving it a Purple Sweet Potato twist! You're going to love this recipe! Battenberg Cake with Vanilla and Purple Sweet Potato Flavour Ingredients for Vanilla Cake (4” x 4” square pan): 3/4 cup cake flour 1/4 cup sugar Pinch of salt 1/2 tsp white vinegar 2 1/2 tbsp canola oil 1/2 cup water 1 tsp vanilla extract Ingredients for Purple Sweet Potato Cake (4”x 4” square pan): 3/4 cup cake flour 1/4 cup sugar Pinch of salt 2 tbsp Purple Sweet Potato powder @my.blue.tea 1/2 tsp vinegar 2 1/2 tbsp canola oil 1/2 + 1/3 cup water Ingredients for Buttercream: 75 grams dairy free butter (room temperature) 170 grams icing sugar 1-2 tbsp milk of choice (optional 1 pack 25gm Coconut Milk Powder) 1 tbsp Purple Sweet Potato powder @my.blue.tea Method: (1) Mix all dry ingredients in a large bowl, set aside. (2) Place all wet ingredients in a separate bowl, mix to combine well. (3) Add the wet ingredients to the dry ones. Gently mix with a spatula until everything is incorporated. (4) Repeat the same process for the purple sweet potato cake. (5) Pour each batter into separate baking tins, lined with parchment paper. (6) Bake the cakes at 170 degrees Celsius for 30 minutes. To make buttercream: Simply cream butter, icing sugar and sweet potato powder until smooth and silky. Adjust the consistency with milk. Assemble and Enjoy! BATTENBERG CAKE: BAND OF BROTHERS? How did the Battenberg Cake come about? The Battenberg cake is a classic British dessert that originated in the United Kingdom in 1884. It was created in honor of the marriage of Princess Victoria to Prince Louis of Battenberg. Throughout history this cake has also been called church window cake, checkerboard cake, domino cake, Neapolitan Roll. Thing is, there is no known evidence to support this theory. A recent variation of the story says that the four squares of the cake represented Prince Louis of Battenberg and his three brothers. The earliest recipe was supposedly published by Frederick Vane in 1898. This recipe called for a cake with not four but nine squares. Perhaps that was just too much work and nowadays we know the Battenberg Cake as one with four squares. This cake began to be mass produced in the years before the Second World War. We found this Coronation Chicken via Twitter and requested our Brand Ambassador, Amazing Grace to help re-create it using our Spice pantry products. Tah Dah! Coronation Chicken Afternoon Tea Sandwiches Coronation chicken was created in 1953, when renowned florist Constance Spry and cordon bleu chef Rosemary Hume catered for a banquet to celebrate the coronation of Elizabeth II. It is believed to be inspired by the ‘Jubilee Chicken‘ created for George V’s Silver jubilee in 1935 With hints of the British Raj, the recipe is a peculiar mix of sweet and savoury. The Coronation chicken recipe was invented as a post war solution for the Queen's coronation banquet on June 2, 1953 when 350 foreign dignitaries were in attendance. With tender chunks of chicken coated in a mildly spiced sauce with mayonnaise, it soon became one of the most popular dishes of 1950s Britain and is still served as part of a traditional afternoon tea in hotels and restaurants across Britain. In fact, finger sandwiches filled with Coronation Chicken are a firm favourite for afternoon tea at Buckingham Palace and at Balmoral Castle, where the Queen spends her summers. Now >70 years on, Coronation Chicken is still a very popular dish, so why don’t you give it a try to celebrate King Charles III Coronation. Recipe for the Maharajah Chicken (Serves 5) Ingredients: *1kg chicken thigh fillets *1 bay leaf *1 stalk curry leaves *1 red onion *2 tablespoon @my.blue.tea Spargo Meat Curry based powder *2/3 cup of water Half lemon (juiced) *1 tablespoon tomato purée *160ml plain yoghurt 30ml cream (optional) *3 tablespoons mayonnaise *1 handful dried apricots (chopped) *1 handful of sliced almonds (optional) *Salt & sugar to taste Method: 1. Cut chicken fillets into 2cm cubes & blanched in boiling water until cooked. Strain and leave aside. 2. In a pan, fry sliced red onion, curry leaves and bay leaf until fragrant. 3. Add meat curry based powder and water to the pan and fry the powder blend into the mixture. 4. Add lemon juice and tomato purée into the mixture. Insert salt and sugar to taste. 5. Let the mixture simmer for about 2 minutes to reduce the liquid. 6. Filter the curry mixture into a bowl and let it cook down. 7. In a separate mixing bowl, mix yoghurt, mayonnaise, cream and chopped apricots together. 8. Mix in the cooled down curry mixture into the mixing bowl and mix well. 9. Serve chicken with the sauce with Fragrant Coconut rice ie Nasi Lemak Premix or as Sandwich. Coronation Chicken in Sango or Wraps and our version of Maharajah (Coronation) Chicken with Fragrant Coconut rice. Enjoy whichever way you like and tag us should you make one. I love it so so much! 😃" Pandan Tart with Wholemeal Crust Ingredients for Tart Shell: *1 ½ cup organic wholemeal flour *1/3 powdered sugar *100 gram cold buttery coconut spread *1 tsp vanilla bean extract *Pinch of pink *Himalayan salt Ingredients for Filling: *1 cup coconut water (dilute 1 tspn @my.blue.tea Coconut Water powder into the water) *1 cup almond milk 1/3 cup caster sugar *1 tsp agar agar powder *Pinch of pink Himalayan salt *2 avocados *2 tsp MY BLUE TEA - Pandan Powder BUY PANDAN POWDER NOW Health benefits of Pandan METHOD: To make the Crust :- (1) Place all ingredients, pulse to combine well until you get a coarse crumbs texture. (2) Transfer mixture to the tart pan, press firmly to the bottom and sides of the tart pan. (3) Shape them well. (4) Once ready, place it in the fridge to firm up. (5) Right before baking, pierce all over the bottom of the tart crust with a fork. (6) Then bake it at preheated oven (180 degrees Celsius) for 20 minutes or until the edges turn to a nice golden brown shade. (7) Let it cool on a wire rack while you prepare the filling. BUY PANDAN POWDER NOW To make the Filling : (1)Add coconut water, milk, sugar and agar agar powder in a small saucepan over medium low heat. (2) Let the mixture simmer until sugar and agar agar has completely dissolved. (stirring constantly to avoid jelly forming at the bottom of the pan) (3) Once ready, place the avocados and 1/3 of the liquid mixture in a blender, pulse for couple of seconds until roughly combined, then add half of the remaining liquid mixture and blend again. (4) Repeat for the last batch of liquid, blend until you get a very smooth texture. (5) Lastly, add in the PANDAN POWDER, pulse to combine. (6) Pour filling mixture over cooled tart shell, then smooth the surface with an offset spatula, gently tap the tart pan on the counter to release the air bubbles. (7) Place the tart in the fridge to set for couple of hours. (8) Decorate with fresh fruits or edible flowers before serving. How to make Blue Swirl Bread Loaf with Butterfly Pea Powder? Bread is a staple food prepared from a dough of flour and water, usually by baking. Throughout recorded history it has been a prominent food in large parts of the world and is one of the oldest man-made foods, having been of significant importance since the dawn of agriculture. Now this is a twist to bread and give you some colours at the breakfast table. Here's the recipe - INGREDIENTS : White Layer *1 cup luke warm water *2 tsp active dry yeast *1 tsp granulated sugar • *2 1/2 cup bread flour *3 tbsp olive oil *4 tbsp raw cane sugar *1/2 tsp pink salt • Blue Layer 1 tbsp luke warm water 1 tsp Blue Butterfly Pea Powder @my.blue.tea • Beautiful ! Gorgeous ! Superb ! Magical Blue Swirl Bread Loaf BUY BUTTERFLY PEA POWDER NOW METHOD: (1) Proof yeast by mixing water, yeast and sugar. Set aside. (2) Add flour, sugar, oil and salt to stand mixer bowl, mix on low speed for couple of seconds. (3) Then add in the yeast mixture. Mix until you get a very smooth dough. (About 10-15 minutes) (4) Then divide the dough into half. Form one of the dough into a round shape then place it in an oiled bowl, set aside. (5) Add water and Blue Butterfly Pea powder, mix well. (6) Knead the other half of the dough on a floured surface together with the blue powder mixture until very smooth. (Add a tbsp of flour if needed). (7)Place blue dough in an oiled bowl. (8) Let them rise at a warm place for an hour (cover with kitchen towel) (9) Once ready, roll out the white dough into a rectangle shape. Repeat for the blue dough. (10) Place blue dough on top of the white dough then roll them again with slight pressure. Roll the dough into a log. Then place it in a loaf pan to proof for another hour. Butterfly Pea Tart with Wholemeal Crust Ingredients for Crust : * 1 ¾ cup wholemeal flour * 1/3 powdered sugar * 100 grams dairy-free buttery spread * 1 tsp pure vanilla extract * Pinch of salt Ingredients for Filling: * 1 cup full fat coconut milk * 1 ½ cup almond milk * 4 tbsp granulated sugar more (adjust to taste) * 1 tsp agar agar powder * 2 tsp MY BLUE TEA - Blue Butterfly Pea Powder BUY BLUE BUTTERFLY PEA POWDER NOW Health benefits of BUTTERFLY PEA or scientifically known as CLITORIA TERNATEA METHOD: TO MAKE THE CRUST : (1) Add all ingredients to food processor, pulse to combine until you get wet sand texture. (2) Transfer mixture to tart pan, press firmly to the sides and bottom of the pan. (3) Place it in the chiller for 15 minutes. (4) Meantime, preheat your oven at 180 degrees Celsius. (5) Once ready, remove the pan from the fridge and pierce the bottom of the tart with a fork. (6) Bake it for 20 minutes or until the edges become golden brown. (7) Remove the tart form the oven and let it cool on the counter while you prepare the filling. Make these Beautiful Cupcakes for Mum! EGGLESS CHOCOLATE CUPCAKES with Chantilly cream frosting - sounds good!? With Mother's Day coming up on May 14th, why not get ready to give mum a surprise with this beautiful eggless chocolate cupcake recipe? With the pretty Chantilly cream frosting, these cupcakes are going to delight anyone's heart (and stomach)! Have a go, practise a few times and when Mother's Day is here, you'll have the prettiest cupcakes ever to make mum happy! (Mum will think it's gorgeous anyway, simply because it's made by you!) Ingredients: 1-1/2 cups self-raising flour 1 cup castor sugar 1/2 cup unsweetened cocoa powder 1/4 tsp baking soda 1/4 tsp salt 1 cup milk mix with 1 tbsp white vinegar or use buttermilk 1/2 cup flavourless oil 1 tsp vanilla extract 2 tbsp water Method: (1) In a large bowl, sift together flour + cocoa powder. (2) Add sugar, baking soda, salt + mix to combine all dry ingredients together. (3) Add 1 cup milk to 1 tbsp white vinegar. Let it sit for 5mins. (4) After 10 mins, add oil and vanilla extract to the milk-vinegar liquid. Stir to combine. (5) Add the wet ingredients to the dry, mix till the ingredients are just combined. (6) Add 2 tbsp of water if the batter is too thick. (7) Fill the cupcake liners 1/2 full with the batter. (8) Bake at 180degC for about 15minutes or till a skewer inserted in the center comes out clean. (9) Remove from oven, transfer to a wire rack and let the cupcakes cool completely. Plus sneak peak to our upcoming DIY Coconut Shake HomeKit Look how gorgeous is this Purple Sweet Potato Chia pudding. This is such an easy recipe. Jump straight to recipe. Ingredients:- *20 grams Intense Purple Sweet Potato Powder *1/4 cup chia seeds *1 1/2 cups soy milk *1/4 cup sago *Maple syrup (optional) *Additional soy milk or Dehydrated Coconut Milk Powder (DCM) *Portable Handheld blender (check out our new cool portable blenders) Method: To Prepare the Sago (1) In a small saucepan add water and let it boil. Once it is boiling add in the sago and let it cook for a couple of minutes. Once cooked close the lid and set aside for 30 mins until you no longer can see the "white spots"in the middle of the white pearl. (2) Drain them and place them straight in iced cold water. Gently separate them with your fingers and set them aside until ready to use. You can do this step much earlier and keep the sago in the fridge. To make Chia Pudding : (1) Whizz away Purple Sweet Potato Powder with the soy milk (add water if required depending on the consistency you want). You can whizz this in our portable blender. (2) In a mason jar, place chia seeds and the blended Purple sweet potato combine and stir well. Add maple syrup if required. (3) A couple of hours later, add sago and extra soy milk to adjust the consistency to your liking. Chill and enjoy.
