Coconut Pudding

2 selections of Coconut Puddings with Gluten and Gluten-free options


Here we go again, you will need to be "pudding" up with us for awhile because it is not only yummy, lightweight - there's NO cooking involved and you would only need to add hot water.


For Dessert Bars and Cafes where you do not have a lot of cooking facilities, this is a great dessert for your customers. Or for your last minute party that you need to whip up a yummy dessert in less than 1 hour (including chilled time in the refrigerator).


Here's what you need :-

Recipe 1 - Coconut Pudding (Gluten free)

- with Pudding Eaze (an instant Coconut Pudding base)

Ingredients for Cooking Pudding

*150 ml Hot water (-90 C)

*1-2 Mangoes (cut into cubes to serve)

*1 Lime (juice)

Serving Instructions

1. Add Coconut Pudding Base to hot water and stir evenly.

2. Pour the pudding mix into the pastry tart shells while still hot/warm.

3. Let it cool, then chill in the refrigerator and viola serve.



Recipe 2 - Coconut Pudding (Gluten)

With just 4 INGREDIENTS - sugar, cornflour and dehydrated coconut milk by @my.blue.tea this coconut pudding comes together beautifully. Fluffy, delicate, creamy, melting in the mouth. Trying to find every words that describes the texture of this delicate coconut pudding 🌴 Perfect for a warm summer day ahead 😅 Don’t forget to put the lime juice/zest, it makes a whole lot of difference 👅

Coconut Pudding (gluten) using @my.blue.tea Dehydrated Coconut Milk Powder

Ingredients

*1/4 cup Corn Flour

*1/2 cup (+/-) sugar

*A pinch of salt

*Mangoes into cubes

*1 Lime


Method:

1. Grease the moulds with coconut oil and set aside.

2. Prepare 500ml water with My Blue Tea 4 packs of dehydrated coconut milk and stir well.

3. Pour coconut milk mixture, sugar and a pinch of salt into a saucepan. Stir well.

4. Scoop 1/4 cup out and mix with the corn flour. Set aside.

5. Heat coconut milk mixture until sugar are completely dissolved.

6. Bring to a boil and lower heat before pouring the corn flour mixture. Stir for 2 min until is slightly thickened.

7. Pour into greased moulds and refrigerate for at least 2 hours.

8. Place the coconut pudding on a plate by turning the mould over.

9. Put cut mangoes in the centre and squeeze some lime juice and sprinkle lime zest on top. Serve 😊
