Here’s a fantastic gin recipe using the "Still Method," generously shared by Mark Watson. Mark had ordered a large pack of Butterfly Pea flowers online, and after a quick chat, he was excited to try our Pandan Coconut Gin. We absolutely love when you're adventurous enough to explore new flavors with our Superfood powders! And guess what? The Still Method is a traditional and essential process used in the production of gin (and many other spirits). This method involves the use of a pot still or column still to distill the alcohol and extract flavours from the botanicals used in gin-making.

Method using a Still

Ingredients

 

1.    3 litres of 95% Alcohol

2.    150 grams of Juniper berries

3.    50 grams of Cardamon pods

4.    30 grams of coriander seeds

5.    1 stick of cinnamon

7.    Peel of 1 lemon

9.    5 litres of water

 

Why the Still Method is Important
The Still method allows for complete control over the flavours extracted from the botanicals and ensures that only the finest aromas and tastes are captured. Distillers can experiment with different botanical blends, distillation times, and techniques to create a gin that is unique and full of character.
It's a craft process that combines tradition, artistry, and science to create the perfect gin in every bottle.

Butterfly Pea Gin

Process :-

(1) Put the alcohol and water into your still, combine the botanicals and Butterfly powder into a muslin bag and either immerse it in the water or suspend it from the base of you still with a measuring jug under the outlet.

(2) Turn on you still, disgard the first 150 ml of the output collect the remainder in bottles until the temperature in the column reaches 80C and then turn off the still.




(3) Check the alcohol level of each bottle (the gin will be clear at this point)

Pass all the gin through a carbon filter and add sufficient distilled water to the top of the filter to bring the alcohol level to 45%. For example if you have 2.5 litres of 95% gin add 2.5 litres of water.

(4) You now have approx. 5litres of clear gin with alcohol level of 45%.

(5) Put 50 grams of Butterfly Pea loose tea into a glass or stainless container and add the gin, leave for 48 hours stirring regularly.

(6) Remove the flowers (tea leaves) from the liquid, I use a measuring jug to pour the liquid into a kitchen sieve pressing the leaves firmly to extract the maximum liquid.

(7) Final step is to strain the ink coloured gin through a fine muslin or clean calf length stocking into your bottles and lable your gin.

(8) Store in a dark place, enjoy with your taste in mixer the colour will change depending on your mixer.
